L'Officine du Cacao was born of the encounter between Claire Tabbagh, a graduate of the Ducasse school, and a remarkable building that had been home to three generations of a family of pharmacists in La Charité-sur-Loire.
Between Claire and chocolate, it's a story of gourmandise and craftsmanship; working with her hands on a noble material. The cocoa bean is shaped like the vines of a terroir or the sandstone turned in the Loire Valley.
Our chocolate, with the "La Belle Nièvre" label, is made entirely at the Officine du Cacao. We work with cocoa beans rigorously selected by origin, using the "Bean to Bar" method: gentle roasting, pre-grinding, grinding, conching and maturing to bring out the full flavour.
At the Officine du Cacao you'll find a wide range of artisanal products: chocolate bars, chocolate bonbons, confectionery and travel cakes. Visit the Officine du Cacao workshop-boutique at La Charité-sur-Loire in the Nièvre region.
