Like all aristocratic residences, the castle of Montigny-sur-Aube was equipped in the 19th century with a superb orchard and vegetable garden of 5244m2 enclosed by walls - a real food garden - where several hundred varieties of fruit trees, in espaliers of various shapes or in counter-espaliers, cover all the 3.60m high walls and the ironwork arches in a skilful manner. In the centre of a cross of paths stands the gardener's pond and its beautiful Renaissance fountain, and in front of the melliferous garden a superb 19th century apiary where the pollinating bees are busy. As for the vegetable gardens, you will discover, in season, more than a hundred varieties of tomatoes in teepees in the middle of carnation patches, and in the frame garden, a whole collection of aromatic plants that supply the farmhouse kitchen with incomparable flavours. As for the red fruit gardens, in the middle of the quarter-stem plum trees, you will discover blackberry bushes and raspberry bushes well tamed in their ironwork. A whole 19th century know-how that the team of gardeners tries to perpetuate with passion and expertise and which is told to you, during your visit, thanks to the audioguide. Even a model located at the back of the apiary explains the principles. At certain times of the year, this unique place is also the place where pruning and grafting or cuttings are taught to the general public (registration required).
