The hotel's signature restaurant and a reference in Beaune, the sense of detail is omnipresent in this place that pays tribute to the love of good and beautiful food.
Dining at the Bistro de l'Hôtel is like an evening at the Theatre where the service highlights the cuts of the dishes and the flambé of the desserts. The dishes, especially the roasted Bresse chicken, are cooked in a spirit of sharing and conviviality. The Menu Dégustation (Tasting Menu) gives pride of place to local products and the great classics of French cuisine.
Chef Johan Björklund has spent over 40 years in France. The first part of his career in Paris allowed him to learn about French cuisine, and then, as he travelled, he added Swedish, Asian and Italian touches. Seasons are an inseparable part of the offer, regularly renewed according to the arrivals.
With prices higher than a simple Bistro and a wine list of 1'750 references, patiently built over time, is proposed to complete the Experience in the Wine Capital of Burgundy.
The more than 15,000 bottles in the cellar, 90% of which are local, make the Bistro de l'Hôtel a unique and benchmark "Wine and French Art de Vivre" experience in Beaune's historic city centre.
