Château Favray is a family business producing Pouilly Fumé, with all 16 hectares of its vines grown on the same clayey-limestone hillside. The ambition of owner-manager Quentin DAVID is to create a Pouilly Fumé which truly expresses the character of this terroir. The vineyard is managed with respect for the environment, to obtain carefully controlled yields. The wine is made in a modern, thermo-regulated winery. The wine is then aged on its lees for six months. The aim is to restrict handling as much as possible between wine-press and bottle.
