The shop in La Clayette also offers to taste its chocolates but also its pastries and ice creams in the tea room it has opened. A beautiful place to taste local products in a soothing setting.
Made from cocoa paste, Dufoux chocolates are entirely handmade, the bars are worked on marble to give them that characteristic smoothness and shine.
Our chocolate is made with cocoa beans from small-scale farms in South America and the Caribbean. Sometimes we are also seduced by cocoa from rare origins, from exceptional terroirs: Vietnam, Ghana, Peru. Our preference is for Criollo beans, a rare species that represents 5% of the world harvest.
As a partner of Valrhona for more than fifty years, Dufoux works with cocoa paste, obtained from the grinding of roasted cocoa beans rich in cocoa butter, rather than with couverture. For our creations, we select the best varieties of all our raw materials: dried fruit from Sicily, Piedmont and Marcona, fresh mint, blackcurrant buds from Burgundy and fresh fruit, most of which is picked in the family garden, almonds from Provence, red pepper from Jamaica, etc.
