Established in 1832 and classified " Historic Café of Europe ", the Café Parisien is situated in full city center, between the City hall, the François Pompon museum and the Romanic Basilica Saint-Andoche. His facade of freestone and marble is quoted in the Inventory of the Historical Buildings of France and the internal spaces were supernaturally preserved what is worth to him the title respectable and envied of " Older Café of Burgundy ". Since his creation, " The Parisien " was the center living on the city, with his rooms of billiards, card games and meetings... Frequented formerly by the sculptor François Pompon, the cook Alexandre Dumaine, the engineer Jean Bertin, the inventor of the turbotrain, the writer Jean Genet and more recently the draftsman Roland Topor or the famous Chef Bernard Loiseau, there was a meeting place where mix all the coats of the population. Since April 15th, 2004, Jean Marc Tingaud, famous photographer and son of the soil, surrounded with a welcoming and enthusiastic team, restored life in the Café Parisien into the respect for the traditions of hospitality and for greed of Saulieu, for Morvan and for Burgundy. Today enriched by a restaurant of regional food and a shop of selected wines and local products, the Café Parisien immortalizes this tradition of the " good to drink, well to eat and well to live ". It became the meeting place of the musicians of the surroundings, the artists and the lover of the art and the good food, in the joy of life living and the simplicity. All year round, concerts, exhibitions, conferences and seminaries follow one another. In the last floor, we visit the apartment of the former owners, become place of exhibitions.
