With a resolutely committed menu, the chef invites you to discover bold new flavours. At "Le Cinquante-huit", 80% of the produce is sourced within a radius of less than 58 kilometres from producers carefully selected for their commitment to the ecological transition. The menu changes every two or three days, and we often say that it's the farmer who makes the menu!
