In conversion Organic Agriculture to obtain the label in September 2021, I am installed with my Lacaune ewes in the heart of the Community of Communes "Portes de Puisaye-Forterre", in Sainte Colombe sur Loing at the foot of the source of the Loing. I transform all their milk into different cheese products, namely fresh and matured lactic cheeses, yoghurts and tomme.
