At the end of 2022, Guillaume Crépin set up his farm at the foot of the Morvan mountains, in the centre of the Nièvre region. He arrived from Belgium with his family and a few cows of the Blanc-Bleu breed on the beautiful meadows of the Nièvre.
"I came here because it's a beautiful, very natural area. I wanted to take over a modest-sized farm that was entirely grassland. I work in an extensive way, with reasoned management of the whole farm: inputs, workload per hectare, nutrition...
The aim is to have between 40 and 50 calvings a year and to make the most of all my production: cows and steers. I feed as much grass as possible, and during the growth and finishing periods I supplement with raw materials such as maize, wheat, rapeseed and alfalfa, bought locally and mixed on the farm.
The Blanc Bleu breed is a very calm, well-conformed cattle breed. It produces very tender meat with less fat.
To be able to taste my meat in a restaurant, sublimated by the Chef, is an extremely motivating achievement. I know my cattle's entire career path, as well as all my partners who are as passionate as I am.
