The Bailly Lapierre cellars in the heart of the Auxerre winegrowing region are a center for the production of Crémant de Bourgogne wines. They are located in ancient underground quarries covering some four hectares. Individuals are welcome for guided tours in the afternoon only, and groups by appointment all year round. Tours are offered in French, English, German, and Dutch.
