KURA is an artisanal factory of Japanese products located in the Charolais, at the meeting point of two terroirs: Burgundy and Japan.
KURA uses traditional Japanese recipes with local organic ingredients: French organic soya, organic rice from the Camargue or Italy, IGP salt from Guérande Nature & Progrès
KURA offers Japanese sake (tasting and cooking), condiments (misos, "real" tamari extracted from miso) and beers with a Japanese touch (barley, kôji malted rice, Sorachi and local wild hops).
All our products are based on the adaptation of the ancestral Japanese kôji malting process to the varieties of cereals (rice, barley) and legumes available in France (soya, chickpea, lentils). Our products are made exclusively by natural fermentation, without preservatives or additives.
In particular, the local production allows us to offer unpasteurized misos that keep their probiotic and organoleptic qualities.
KURA products are distributed in organic or bulk shops, delicatessens & wine merchants and to chefs, currently focused on the Lyon, Burgundy and Ile de France regions.
