Since 1994, when I started at the Nicolas Appert hotel school in Orvault, a lot of time has passed and a lot of experience has been accumulated, including some very memorable ones at the Domaine des Hauts de Loire in Onzain and the Barley Neck Inn in the United States.
As a qualified teacher since 2006, I've been able to teach cookery to different levels of students from CAP to Licences. On my return from French Polynesia after a two-year assignment at the Lycée Hôtelier in Tahiti, I wanted to bring to fruition a project that had been close to my heart for a long time, so that I could continue to share my passion for cooking.
The result was Culinaria, a project designed to share my experience with individuals and professionals who, like me, are passionate about cooking. Culinaria has been running for 7 years now, and it's been a great success. This year will be our eightieth workshop...
In a warm and friendly atmosphere, come and discover or learn more about classic or more modern cooking techniques.
Using a recipe booklet given to us at the start of each workshop, we'll work together step by step to prepare the recipes for the day's theme.
After each workshop, we'll sit down at the table to taste the dishes we've made, accompanied by a glass of wine, and spend some quality time together with other cooking enthusiasts.
Located inside the Collège du Vallon in Autun, the kitchen and restaurant are fully equipped to welcome you in the best conditions.
