I have naturally chosen to use a flour that is organic, delicate and above all capable of offering a nourishing bread with subtle and authentic flavours.
These old varieties, baked in this way, guarantee good digestibility and a substantial supply of nutrients.
The cultivation of wheat, in close connection with bread making, is part of a cultural heritage built up over thousands of years.
