Start with some classics

At Sens, La Madeleine (2 stars) uses local produce to serve traditional dishes with innovative and unusual flavours, such as foie gras with blackcurrants.

Further south in Joigny La Côte Saint Jacques, a Michelin 3 star restaurant, serves sophisticated cuisine ... Gougères, moist almond and raisin cakes or crunchy Dagmar sweets – a paradise for the sweet-toothed!

In Vézelay, near the famous basilica, L'Espérance (2 stars) has a tranquil, soothing interior and serves local produce prepared by its chef, Marc Meneau... Have you heard of its “Marie-Antoinette strawberries", a dish created for Sofia Coppola?

Move on to the 'new wave'

In Dijon and Beaune you can try out new wave cuisine! At the very heart of Dijon or near the famous Hospices de Beaune, savour a glass of Burgundy accompanied by delicious little appetizers, in the hushed atmosphere of a “lounge bar”.

At Nevers, along the Canal de la Loire, you can sample local specialities, such as Négus, a kind of chocolate fudge or Nougatine which was invented nearly 100 years ago in this shrine town.

In the famous spa town of Pougues-les-Eaux, be sure to sample Pougatine, a local speciality which is still made using the traditional recipe.

On the road, remember to try some Morvan honey. This totally natural product has a taste and flavour all its own. Why hold back?

End on a traditional note

Along the Canal du Centre, the Maison Lameloise 3 star restaurant [Lien vers base de données] in Chagny serves some very sophisticated dishes, like its dainty flan filled with Burgundy snails.
