In the kitchen of his restaurant, Stéphane Derbord combines creativity and local conventions. The chef finds inspiration in the best of Burgundy’s cuisine when creating delicious and elegant recipes.



Among the specialities on the menu, you can try, for example:


  • tomatoes stuffed with Burgundy escargots, hot tomato gelee and flat-leaf parsley emulsion ;



  • Charolais beef paleron cooked till melting, Pinot noir juice with a vegetable pot-au-feu ;



  • trout cannelloni with crayfish, elianthis mousseline with Crémant de Bourgogne butter ;



  • crème brulee with Tonka beans, caramel mousse and pear sorbet.





And for those who want to be the head chef at home, the chef has a “Recipe of the moment” section on his website, which changes with the seasons. That way, you can cook one of Stéphane Derbord’s specialities at home!

Awarded a star in the 2013 Michelin Guide, the Stéphane Derbord restaurant is located in Dijon, at the end of the very beautiful park alleys.



The dining room is lit by a vast glass wall that opens out onto a natural setting. The decor is simple and uncluttered. Contemporary design is combined with the colour of the floor-tiles for a calm, almost zen, atmosphere.
