Burgundy, with a touch of originality: this is how Emmanuel Hébrard’s cuisine is defined. The chef at the Abbaye de la Bussière uses seasonal products in elegant gourmet recipes, such as:


  • deer filet rolled with lard and flavoured with sour orange, chervil nougat, caramelized kohlrabi and devil sauce made with hot spiced wine ;



  • white truffle and ratte en écrasée potatoes, burned leek salad, Culatello ham and gorgonzola mousse ;



  • or stuffed quince with juice, nut gianduja disk and granulated coffee ice cream.





A selection of fine wines goes beautifully well with these gourmet dishes (and will delight gourmets!)

Once an Cistercian abbey and a place of retreat, the Abbaye de la Bussière is a 30 minute drive from Beaune. The restaurant, which was awarded a star in the 2013 Michelin Guide, is located within this exception site, converted into a Relais & Châteaux establishment.



The buildings, which have been tastefully restored, house three lounges with ancient charm and complete with fireplaces. Dinner is served beneath the abbey’s arches, in the cloisters or on the terrace out in the quiet park.
