A big fan of Bresse cuisine, every day Didier Denis adds his own twist from behind the pass at the Hostellerie bourguignonne in Verdun-sur-le-Doubs. The chef enjoys adding a new twist on traditional regional dishes, by adding lightness and refinement.

A specialist of the Pôchouse Verdunoise (fish with firm skin, slow-cooked in dry white wine), he also has some other lovely recipes on his menu, such as:

  • chalonnais-style crayfish petite nage, sots-l’y-laisse, rooster cock combs and kidneys and truffle foam ;

  • the fine pink praline tart, poached rhubarb and bourbon vanilla ice cream.

A moment of relaxation on the edge of the Doubs

Halfway between Beaune and Chalon-sur-Saône, the Hostellerie bourguignonne will give you a warm welcome. This charming inn seduces with its rustic decor, where wood, leather and velvet are present throughout the typically Bressan furniture.

Close to the gourmet restaurant, the flower park provides a pleasantly relaxing moment, before or after your meal. You can also buy a few bottles of fine wine on site; there are 600 varieties to choose from. Or you can book cooking lessons with the chef!

The establishment’s seven rooms and suites will provide hospitality for a night or a longer stay, in a calm and relaxing atmosphere.
