The chef, Patrick Gauthier, is in charge of the kitchen at La Madeleine, in Sens.Awarded a Michelin star in the 2013 guide, he is on hand to let you discover his love of food and produce.



On the menu, a wonderful market cuisine which dictates the composition of the menus according to the seasons. For example:



  • Warm foie gras in scallops and Banyuls vinegar;



  • Paimpol bean(cranberry bean) velouté, organic eggs and pata negra (“black leg” Iberian cured ham);



  • squab with Lautrec garlic "as I like it", Fregola (a type of Sardinian pasta) prepared like a risotto;



  • half baked, half melting chocolate guanaja.




The wine cellar pays homage to Burgundy's wine producing heritage, with some notably wonderful Chablis crus (vintages wines).




A gourmet meal with a family atmosphere



At the heart of the very beautiful town of Sens, 5 minutes on foot from the cathedral, the gourmet restaurant La Madeleine welcomes you in an intimate and warm atmosphere.



The owners of the place, Chef Gauthier and his wife, have opted for an authentic décor. Bold hues and finished panelling stand alongside an old range cooker and a beautiful spice rack at the entrance, whereas the dining room displays pastel notes and plenty of light.
